The panel on the left appears to have color inversion. I tried switching the panels, no dice.

Basically, your hardware configuration and which command you run.
This is my hardware config, its a Pi 4 with the new adafruit bridge.
I’m using the led-image-viewer command.
I’ve never used adafruit hat, but I’ll try to help you.
Your command should be something like this :
sudo ./led-image-viewer yourimage.png --led-rows=32 --led-cols=64 --led-chain=2 --led-gpio-mapping=adafruit-hat --led-multiplexing=?
Did you try each value of led-multiplexing ?
